I have a definite sweet tooth but like most people, I don't want to gain weight, so I try to find recipes for healthy sweets that I can eat without feeling too guilty.  I really love tofu and normally you wouldn't think of it as a dessert item but I've finally found a way to make it where it's delicious and somewhat healthy at the same time.  Introducing...Tofu Jello Pie!  It's really easy to make and tastes so delicious, so I love bringing these to potlucks or giving them away as gifts for Christmas.

Tofu Jello Pie Recipe

Ingredients:
1 small box of Jello in any flavor of your choice
1 block of soft tofu
1 lemon
Pre-made pie crust (found in the baking section, usually made of cookie crumbs)

Instructions:
Mix jello powder with 1 cup hot water until fully dissolved.
Let cool to room temperature (don't let it solidify, it needs to stay liquid!).
Once cooled, blend it in a blender together with the block of tofu and about a teaspoon of lemon juice from your lemon.  It should turn into a foamy liquid.
Pour the mixture into the pie crust.
Chill in refrigerator until the pie is solid.

That's it!  It's amazing how something so simple and quick to make can be so delicious!  Here's a slice of the pie using lime jello.
